A Tip Regarding Champagne

Finally! I'm back in Vienna and I have Internet service!! I'd like to pass on a tip from Xavier at L' Orchidee Restaurant on Rue Lauriston in Paris. It was there we had a superb glass of champagne. I've tried champagne a number of times in my life and have even tasted what I would consider expensive champagne. Xavier said the secret is to get aged rather than expensive champagne. That's what the French do, he said. So there is his tip. For an in-depth discussion of aging champagne, see this article at Wine News.

  1. I'd take a glass of Champagne anytime,
aged or not, as long as it is well chilled!
    Thanks for the tip, though.
